Mushrooms, I can’t stand mushrooms. That taste repeats on you all day, it’s horrible.
And yoghurt, boke, I once had someone cook me a meal of pasta in a sauce made with greek yoghurt and mushrooms. One of the most bland, anaemic looking yet horrible tasting meals I’ve ever had.

It sounds weird to me too to hear how many people hates mushrooms and Indian food (I really love both) but I hate yoghurt too

Put a little bit less ingredients above the aubergine before putting in the oven, cook it and then add basil, parmesan, pine nuts and olive oil and mix everything for 20 seconds: ta-dah you have my beloved “aubergine pesto” ready for your linguini

IMHO the soup is not enough thick. To achieve in a more dense and creamy soup reduce the amount of water and add some milk after your chewed the broccoli (this way it also melts better with cheese and butter). Let it boil for a few minutes to reduce the liquid and serve.
Yeah I know that’s a bit more than a 10 minutes preparation this way…

Or even a bit of cream to make it a little richer!

Just discovered your show and website, Niall! Can’t say enough good things about it – the videos are short and sweet but packed full of great information and easy-to-make recipes. Can’t wait to make this soup and all the other great stuff on your site. Keep up the amazing work!

I did a simple broccoli soup from a ramsay video a while back and did the same thing – far too much water – what reckon of putting the cooked broccoli into a blender and gradually adding the cooking water back into it so you get better control of the thickness?

I used to hate mushrooms because my mum used to over cook and burn everything didn’t like the texture, then during college a housemate cooked all her dishes with mushrooms and I found a new love of them again and havn’t looked back. The food I don’t like would be blue cheese I once had to sit on a hot bus and the old man sitting in front of me burped and he stank of blue cheese. Gulp!
